Why are most viruses highly specfic to the cells they infect ?

Because they have evolved that way. They are weak inside more resistant cells, and strong inside the cells to which they had a small affinity. Over time (and with the influence of antibiotics) they become VERY strong in some areas (cells) and weak in others.

Because the capsid that covers and protects them is only compatible to some cells
viruses have highly flexible receptor(inducible), hence they can bind to the cells strongly and infect until they destroy them
